Dairy-free buckwheat banana bread! It is way tastier than it looks 😉 I was out of regular flour so modified a traditional banana bread recipe... using buckwheat flour, nixing the added sugar and adding frozen blueberries plus a variety of seeds and nuts I had in my pantry. Pre-quarantine I would typically just eat a protein bar for breakfast but having fresh banana bread instead has been a nice treat!

Key Lime Pie-- a delicious treat! I had never made this before, but it was so good I'm sure I will make another one soon.

I made delicious banana muffins that are paleo ! Sugar free but the bananas give them a sweat flavor! 

Makes 6 

  • 1/2 cup of coconut flour
  • 1 teaspoon of baking soda 
  • 2 large eggs 

Stir together 

  • add 2-3 bananas (mash up bananas and then add to mixture)
  • Lots of cinnamon 
  • 1 tablespoon of chia seeds 
  • 1/4 cup of ground flaxseed 

Cook for 30mins on 350 degrees.

Keeping with the banana theme: we made Banana-chocolate-oatmeal cookies. All of the ingredients are in the name: Bananas, chocolate chips, and oats.

I've been trying out flourless recipes since I'm limiting my trips to the store and flour has not always been readily available. These were a cinch to make and healthy too!
